Roasted Vegetables


Last night's dinner was the following roasted veggies: eggplant, cauliflower, red onion, red pepper, zucchini, garlic. Sprinkled with Lowry's garlic salt, herbes de Provence, pepper and olive oil spray . I roasted it for 40 minutes at 375. If you don't like vegetables, VEGAN lifestyle would be difficult. Kiddies had mac 'n cheese and carrots. They refused the ham that I offered them. Pictured are the veggies before I put them in the oven. I also had half a cup of black beans.
